Mexican Pizza!

This is a great end to a very busy week!  A very simple and fun meal to eat with a whole group of people or just you.

It's also nice because it takes 10 minutes to get into the oven and then only about 10-15 in the oven, so this meal will not make you break a sweat and during this time you could always mix up some margaritas.  Hey, it is Friday and this is 'mexican' food right?!

Shopping List:

1) Large Tortillas

2) Black Beans

3) Taco Sauce

4) Mexican Cheese Blend

5) 2 Roma Tomatoes

6) Can of White Corn (just a small can, it doesn't need to be a full sized one)

7) Green Onions

8) Onion

Optional:
Ground meat, Sour Cream, Hot Sauce, olives, chiles

(1 pizza probably feeds two adults and two children)

To Begin:

Preheat your oven to 400 degrees.

Spray a baking sheet with cooking spray.  Place one tortilla on the baking sheet.

Open you can of black beans, drain and mash, spread over the tortilla.  Pour taco sauce over the top of the beans giving is a good coat, but not a thick layering.  A few squirts of hot sauce.  (If adding ground meat this would be when to do it.)

Open your corn, drain, layer over the beans. Dice up 1/4 cup onion and spread over top.  Spread a thin layer of cheese.

Place another tortilla over the top.  Spread a very thin layer of shredded cheese.

Then dice your tomatoes and green onions, place on top, sprinkle with more cheese over them.

Place in over until slightly browned and cheese is melted; about 10-15 minutes.

Enjoy your delicious fiesta!
