Italian Pizza Bake

Need a change from the normal pizza?  This is kind of like a deep dish pizza but without the extra calories and grease that take out place provide.  It is also simple and easy to make on a crazy week day night or on a weekend night you are worn out and don't want to be cooking at all.  So put away the pizza dough and get out the bisquick for this easy, yummy and fast pizza bake!

Shopping List:
1) 1 cooked chicken breast (like with the chicken and rice recipe that I told you to cook on and save it!)

2) 1 yellow pepper

3) 1 small sweet onion

4) Bisquick (I get the heart smart kind)

5) 1 can diced tomatoes (preferably Italian seasoned)

6) Mozzarella cheese

7) Tomato sauce

8) 2 eggs

9) Butter

10) Seasoning; Italian Seasoning, Minced Garlic

Optional:
Other toppings such as olives, pepperoni, spinach, etc.

To Begin:
Start by preheating your oven to 400 degrees.

In a pan cook up 1 cup diced onion, 1 cup diced pepper.  Add salt and pepper to taste.  Let them get soft. (about 5-10 minutes).

While the onion and peppers are cooking in a large measuring cup place 1-1 and 1/2 cup Bisquick, 2 eggs, 2-3 tablespoons melted butter(do 2 first and if still dry add a 3rd).  Mix together.  Add to the mixture 2 tablespoons minced garlic and 1 tablespoon Italian seasoning.  You can add a little water to the mixture if needed.

Once onions and peppers are soft add the can of diced tomatoes (drained), and your cooked chicken breast diced into bite size pieces.  Sprinkled some more salt and pepper and italian seasoning on if desired.  Heat until warm.

In a two quart glass baking pan, that has been sprayed with cooking spray, pour in your batter.  Spread evenly over the bottom.

Spread a small layer of pasta sauce onto the batter.

Pour onion and peppers mixture of the top.  Spread evenly.  Top with mozzarella cheese.

Bake for about 25 minutes.

Serve with extra sauce if desired.

Enjoy!

   Hot out of the oven!

Served up, yum!
