Chicken Fajita Nachos

This is probably my new favorite way to make nachos, not only does it taste yummy but have the fajita seasoning and the carmelized onions with the normal nacho toppings just adds a whole new demension of flavor that at the end of the night leaves you with an empty nacho pan!  Joe and I finished ours off ironicaly while watching The Biggest Loser; at least we had the visual stimulation of the exercise...

To Begin:

Start by turning on your oven broiler.  Set it to low.

Dice up half of your onion and place in a pan with a little but of cooking spray or olive oil. On medium high heat.  Slice your chicken tenderloins into smaller strips.  Sprinkle with seasoning, both side.  Place in pan with onions.  Let begin to brown.  After a few minutes sprinkle more fajita seasoning over the chicken in onions.  Then let cook until chicken is browned and onions are fully cooked.

While the chicken is browning, get out a baking sheet and line with tin foil.  Place tortilla chips on it, make sure to place more along the outside edges of the pan than in the middle so you can actually get to some chips without them all being covered!

Take the Campbell fiesta cheese and pour into a bowl.  Place in microwave for 3 minutes.

At this point the chicken should be browned, open your can of fire roasted peppers and tomatoes.  Slice up red peppers if needed, drain tomatoes.  Place in pan with chicken about 3/4 cups of each.  Sprinkle again with a little more fajita seasoning.  Place on medium low heat.  Let simmer for a minute or two.

Once fiesta cheese is done pour over the chips, again pouring evenly, but not completely to the edges.  Then on top pour your chicken mixture, spreading evenly, but not out to the edges.

Rinse black beans and drain olives.  Place about 1/2 a cup of beans and 1/4 cup olives.

Sprinkle with some cheese if desired.

Place in oven on lower rack (away from the broiler not closer) for about 7 minutes or until chips are starting to brown.

While nachos are broiling chop up some green onions and lettuce.

When nachos come out place lettuce on top some sour cream and guacamole if desired and top it off with your green onions.  YUM!
