Flank steak is a easy to work with cut of meat and for this week I got one that is almost 2lbs for $14.00, which isn't bad at all considering I am using it for 4 meals. Now if you have a larger family than mine you might want to try to find one a little over two pounds and make sure to set aside your alotted meat for your other meals.
The meal tonight is a very simple meal and that is just the way I like them. The kind that taste good, prepare fast and leave everyone wanting seconds or wanting it again another time.
Shopping List:
1) Flank Steak
2) Zuchini (you will need one zuchini for every two people)
3) Sour Cream (I always use light, just as yummy, half the calories)
4) Can of Artichoke Hearts in water
5) Parmesan Cheese
6) Worcestershire Sauce
7) Seaoning for Steak Rub: Rosemary, Paprika, Oregano, Ground Mustard, Cayenne Pepper
8) Bread Crumbs
Rice with this meal also tastes good.

To begin:
Preheat oven to 400 degrees.
Rub steak with worcestershire sauce and then with the steak rub: 2 tablespoons of: rosemary, paprika and oregano; 1 tablespoon cayenne pepper and ground mustard and a sprinkling of salt and pepper over the steak afterwards.
Get out a stove top grill pan and set heat to medium high. Let pan get warm.
While pan is warming clean and cut in half your zuchini lengthwise.
Your pan should be hot, place steak on it and let cook 5 minutes on each side.
Back to the zuchini, scoop out the middle of the zuchini. Chop it into small diced pieced and place in a mixing bowl.
To the mixing bowl add a 1/2 cup of artichoke hearts, 1/3 cup sour cream, a 1/4 cup parmesan cheese, a teaspoon oregano, and salt and pepper to taste. Mix.
Don't forget to be checking your steak and turning it at five minutes!
Place mixture back into zuchinni halves filling them as full as you like, sprinkle with bread crumbs and a little bit of parmesan.
Place in oven for 10-12 minutes.
The meat once it is done needs to sit for 10 minutes, so while the zuchini is cooking, set the meat aside and don't think about it!
After zuchini is done you need to carve the steak. To carve flank steak you need to cut against the grain, this will make it a very yummy meat! If you don't it will make it chewy. So with a nice and sharp night cut the meat at an angle agains the grain.
Enjoy!
