Homemade Ravioli, Garlic Bread, and Salad Greens with a Citrus Dressing!

Sounds fancy, but really isn't that hard at all!  And to begin with, we are making these ravioli's with a twist, they are butternut squash filled which is soooo yummy, but just as simple as normal.  Except you won't be using tomato sauce!

I also will admit this probably isn't the best Friday night meal unless you make the raviolis ahead of time and then cook them because of the prep time and the frazzled nerves of Friday, but I do know that it will make any day even Friday a little tastier!

To Begin:

Butternut Squash Ravioli; so delicious, but will take some prep time and will be harder to do than just in one evening, but I thought they were sooo worth it.

First cut off ends and peel the squash.   Then cut meat into small chunks (about 1-2 cups worth will be PLENTY!).  Boil in water on stove for 20 minutes.

While that is boiling get out wonton wrappers and flour your work space and your wrappers.  Get out a little bowl of water.

Once squash is done, drain and then put back into pan (unless you have a food processor, then you can dump it in there).  To it add 1 tablespoon cinnamon, 1 tablespoon nutmeg, salt and pepper, and 1 tablespoon orange marmalade, and about a teaspoon of zest from one of your oranges.  Mash or blend well.

Take a wrapper place some butternut mixture in the middle and then, wet the edges of the wrappers and place another wrapper over the top.  Pressing firmly. I also had a swivel edge cookie cutter that I used to make it look "fancier". Place on a tray.

Once finished, you will need to freeze them for about 2 hours.

Then boil water and place them in it for about 7 minutes.  Drain.  I like mine with a little Parmesan on top, but a parmesan cheese sauce would also be delicious.

Garlic Bread

Preheat oven to 350.

Cut bread in half, butter the sides, spread mixed garlic on it and sprinkle with Italian seasoning.

Place on baking sheet, bake for about 10-15 minutes.

Salad

In a large mixing bowl place 2 tablespoons orange marmalade.  Into is stir about 3 tablespoons olive oil.  Add the zest of your oranges.  Place lettuce into bowl and mix thoroughly.  Cut up oranges and place in, toss again.  Enjoy!
